4 cloves garlic, minced
2 tsp salt
1 tsp chili powder
1 medium yellow onion, cut in half and thinly sliced
2.5 lbs boneless pork shoulder, cut in 3" pieces

  1. Mix pork, onion, garlic, salt, chili powder and Coca-Cola in a slow cooker pot over medium heat and stir.
  2. Cover the pot and let it cook over high heat, until the meat is tender and shreds easily (5-6 hours).
  3. Place pork and juices in a large saucepan and bring to a boil.  Continue cooking and carve the meat with a spoon, until the juice evaporates to the point where it's only covering the meat (15-18 minutes).
  4. Serve the pork on warm tortillas, topping with items of your choosing (such as lime, chopped onion, cilantro or salsa).
